Gluten Free Cookie Bars

I've been wanting to try gluten-free baking for a while now, but I just wasn't sure where to start. Thanks to a good friend recently, I was able to dive right in.

This friend was trying out a gluten-free diet (per doctor's orders), and was having the worst craving for chocolate chip cookies. I could feel her pain, and knew I had to help her out. I ran home, did a little internet research, and found a recipe for cookie bars. Fortunately I had a bag of gluten free all-purpose baking flour from Bob's Red Mill already in my pantry, so I was ready to go. I adapted the original recipe based on what I had on hand, but I've gotta say that this is one of my favorite cookie bars ever! Gluten free or not! So, a giant thank you to Karina Allrich for sharing your gluten free cookie recipe. You can bet that I'll be doing a lot more gluten free baking in the future.

I decided that this recipe was so good, we had to get it filmed and up on Everyday Dish (with my adaptions, of course) ASAP. The video can be seen here, and the recipe here. For Karina's original recipe, you can find it here at her website. Her site is not vegetarian, although there are quite a few vegan recipes.

As for me, I am thinking about making a gluten-free pumpkin cake next. Hmmm, or maybe an apple spice cake. Now that I have the gluten free flour on hand, anything is possible.

THANK YOU SO MUCH, JULIE! My mom was recently diagnosed w/ Celiac disease, so I've been looking for GF recipes to bake for her. It's awesome that you provided both the recipe and the Everyday Dish TV footage. :)

I'm sooo happy you like gf baking! Karina's recipes are all delicious and I like your adaptations. I love experimenting with all the different kinds of flours and I enjoy their different flavors. I'm nudging you to make the gf apple spice cake next....

I actually just baked my first cake with it using BRM's directions and recommendations but haven't been able to try it--still hot! I'm curious to see how it compares to 'regular' cake. I'm quite encouraged now, great post!

How exciting! I've been having some trouble baking gluten-free lately, and I can't do very good cakes or things like that at all, so hopefully this will at least give some ideas of where I'm going wrong. Thanks for sharing!

Hi Christina. Thanks! How did your cake come out? I'm dying to know. I think one of the tricks with this flour is to use it in recipes with lots of spices or flavors, since the flour does have a stronger flavor on its own.

Thanks Bittersweet! Gluten-free baking is definitely tricky, but I think that the ease of this flour blend makes it more fool-proof.

Yum, these ones look good!! I have learned too that gluten-free baking can be quite a feat. But this recipe looks like it's a treat for those who are gluten intolerant and those who are not! Yum!

these are Amazing!!!! They also freeze very well for lunches. They are cold but still soft right from the freezer YUMMY! I also made your granola and crackers with sunflower seeds and sesame seeds. Any ideas on what gluten free flour to use in cracker making?

Hi 3veggies. I'm so glad you liked them! I am working on some gluten-free cracker recipes, but right now it's all trial and error. By the way, how were the crackers with the sunflower seeds? They sound delish!

Looks yummy; thanks for sharing the recipe. Any suggestions on what can I use to replace the coffee?

Hi Allana. I would use any non-dairy milk to replace the coffee. If you're omitting the coffee, you can also add a little butterscotch or maple extract or maybe even a little ground cinnamon to jazz up the flavor a bit more. Enjoy!
