
We finally did it. The vegan sausage recipe is up on everyday dish (click here for the recipe & video). Oh yeah! I hope that everyone gives it a try.
What I love about this recipe is that you can make so many variations of it. By changing the flavors around, I made a nice spicy chorizo, mild Italian and apple sage sausages. I also found that if you don't want to roll the sausages, you can shape them into small little breakfast patties and steam them that way (they look like Morningstar patties). I even made little tiny sausage links. They are just too much fun!
A quick tip for you too. Although the sausages are good right after steaming, they are so much better after being refrigerated overnight. They also freeze well too.
Now, just to mix things up a bit, we're proposing a challenge for you. We'd love to hear what flavor combos you come up with using our basic sausage recipe. You can email me pictures, recipes, videos, whatever you like. You might even find your sausage recipe, video or pics up on our site. Come on, you know you like a good challenge!!
My one suggestion would be for you try our recipe as written the first time and then go to town. That way you'll get a good idea of what our sausages are all about.

Steaming the sausages (that's right, no boiling or baking!). It really helps to do it in a large steamer, so you have a nice flat surface. This is one that I bought inexpensively at a little Asian market near our house. It also came with another steamer layer which can fit on top.Now what are you waiting for? Get cooking!

Hi Melisser. I actually use the rapunzel oftentimes when I make soup. I think you could probably use a teaspoon or two of the rapunzel, whisked into the wet ingredients. Another idea would be to use Bryanna's homemade broth powder (recipe here: http://www.veganrepresent.com/forums/archive/index.php?t-383.html
You could reduce the amount of salt in Bryanna's recipe, and use the same amount as you would the Chik'Nish powder. Bryanna's broth powder is a fab recipe too!

They sound absolutely delish! Now, what I really want to know is how you make these into apple-sage sausages. Using apple sauce? I can't really think of anything else to flavour them with to get the apple.

Hi Emmie. I was surprised how cheap my big steamer was. It's huge, but I think I only paid $25.00 for it.
For the apple sausages, I added a little shredded peeled fresh apple and a little apple juice as part of the liquid in the recipe. They were so good with just a hint of sweetness.

I also have a question (sorry to ask you in this blog), have you ever used soyatoo whipping cream (the liquid one) to frost cake? I am able to get that and want to frost a birthday cake with it. Anyone? Have you?
I wonder if it stays whipped as frosting for a long time. I know the canned one doesn't stay up or firm.

I intended to tell you this sooner, but I've been busy making sausages - I love this recipe. I've made it at least 5 times now in various permutations. It is my current favorite seitan recipe - not just sausage recipe. It is so easy and produces such a great texture. I played around with the apple sage idea quite a bit and really liked what shredded apple did to the texture, but the variation that I wound up posting is for sweet potato chipotle. Loved these sausages, and you're right, they are better the next day. Now if I could only make a chorizo version -- any chance you'd share the recipe for that? I have a favorite recipe that calls for chorizo and I'd love to be able to make it again.
thanks for the recipe julie! i just posted some pics of your sausage on my blog. they came out awesome! i cheaped out on the foil and shouldn't have. my new variation is a kielbasa version, with ginger, juniper, onion, paprika, marjoram, black pepper. It came out great if you use it, not as amazing eaten alone like yours.
this recipe looks great. i can't wait to try it! question though: i don't have a steamer. but i do have a pressure cooker. any idea how long it would take to steam in that?
